GOBS/WHOOPIE PIES

I found this recipe called Gobs, several years ago and made it for the grandkids. They loved them. I recently saw a recipe for Whoopie Pies and found the recipes nearly identical. Gobs has less fat and no raw egg in the filling. The recipe makes a huge batch so unless you have a very large family I suggest you make half the recipe, or you can try freezing them.

GOBS
2 cups sugar 1/2 teaspoon baking powder
1/2 cup shortening 1/2 teaspoon salt
2 eggs 1 cup cocoa powder
1 teaspoon vanilla 1 cup sour milk
4 cups flour 1/2 cup boiling water
2 teaspoons soda

Cream shortening, add eggs & vanilla then dry ingredients alternately with sour milk and boiling water. (to sour milk, add a few teaspoons vinegar to sweet milk and let stand about 5 minutes)
Drop by teaspoonful onto greased baking sheet and bake five to seven minutes at 400 degrees. Cool before filling.

GOB FILLING
5 Tablespoons flour 3 1/2 cups powdered sugar
1 cup milk 1/4 teaspoon salt
1 cup shortening 1 teaspoon vanilla

Cook flour and milk till thick, stirring constantly to trevent scorching.
Cool.
Cream together shortening, powdered sugar, salt and vanilla, then add cooled milk and flour mixture one tablespoon at a time. Beat until fluffy and fill Gobs.

It might be fun to experiment with chopped maraschino Cherrys in the filling or crushed peppermint candies or heath bars or gummy worms for the kids. Just have fun and get the kids involved. Make a memory.
